3.10 Describe the manufacture of ethanol by the fermentation of sugars, for example glucose, at a temperature of about 30°C
The (natural) catalyst for this reaction are the enzymes found in single-celled fungi (yeast) The anaerobic respiration of microorganisms can produce ethanol.
Glucose > ethanol + carbon dioxide
C66H12O6 > 2C2H5OH + 2CO2
The reaction also takes place at a temperature of 30°C The absence of air is required for this reaction, and the products are purified by fractional distillation
